Facing the wild Loire, la Cabane à Matelot opens its doors to you for a unique culinary experience. Chef Ambroise Voreux passionately sublimates the fish freshly caught by Romain Gadais. Bream, carp and catfish are transformed into surprising gastronomic creations.

Let yourself be tempted by the unique flavours of handcrafted smoked mullet rillettes. This Loire speciality, sublimated with saffron or spiced up with old-fashioned mustard, reveals all the rich flavour of wild fish. Meticulous savoir-faire transforms these catches into spreadable delights. Nicolas Hérault catches around fifteen species of fish that enable him to make these delicious rillettes.

In their workshops, the fishermen become artisans-transformateurs. The fillets are delicately salted with Guérande salt, then smoked with beech wood to develop subtle aromas. Also discover their homemade soups and cooked dishes that showcase each catch of the day.
