Which restaurants will be starred in 2026?

Well… they’re the same as last year, nothing has changed! For the record, the novelty came last year from Cormery, with a green star awarded to the restaurant Les Roseaux Pensants, run by Stéphane Enault and Laurène Attia, who put the spotlight on plants and lacto-fermentation.

Two new gastronomic nuggets from Touraine were also honoured in 2024. Previously awarded a Bib Gourmand, L’Auberge du XIIe siècle won its first star with flying colours. Since 2020, chef Kévin Gardien and his partner Sandrine Marques have been at the helm of the restaurant in Saché, close to the Musée Balzac, where they bring out the best in local produce. In Ligré, Martin Bolaers ‘ restaurant Les Jardiniers was awarded a green star in recognition of its commitment to sustainable gastronomy. In his extensive kitchen garden, the chef himself grows the vegetables that enhance his dishes.

Loire Valley: an exceptional terroir

Touraine reveals a gastronomic treasure trove shaped by centuries of tradition. Its generous soils offer Michelin-starred chefs an incomparable range of produce: early vegetables from passionate market gardeners, exceptional meats from local breeders, cheeses matured with patience.

The banks of the Loire are an exceptional natural larder. Fish from the Loire, prepared according to age-old recipes, rub shoulders with aromatic herbs picked from the restaurant gardens. In the surrounding orchards, seasonal fruit and vegetables ripen to nature’s rhythm.

Between valleys and hillsides, the vineyards add their unique signature to this land blessed by gastronomes. This mosaic of micro-terroirs allows Michelin-starred chefs to compose menus in perfect harmony with the soul of Touraine.
