The legend of Cormery Abbey

Do you know the story of Father Seraphim’s ring? One night while inspecting the kitchens, his wedding ring fell into the macaroon dough, giving rise to their distinctive shape. The Blessed Virgin is even said to have guided Brother Lai, the abbey’s baker, in his quest to save the establishment from ruin. “Knead without ceasing, the divine sign will appear on the dough”, she is said to have whispered to him.

These legendary tales still add to the charm of these unique little cakes, made in Rue Nationale by the town’s craftsmen. Visit one of Cormery’s two bakeries and patisseries to discover the mystery of these delicious golden rings for yourself!

The authentic recipe handed down by the monks

Enjoy the delicate alchemy of these little golden rings, the fruit of centuries-old expertise. The pastry, derived from meringue, harmoniously combines almond powder, egg whites and icing sugar. Leave the mixture to rest in the fridge for two hours before shaping your macaroons.

Using a piping bag with a fluted tip, form regular circles on greaseproof paper. The secret to their unique texture? Controlled baking that gives them that characteristic crunch, while the centre remains soft.

Pascal Debaud, a passionate artisan pastry chef, now perpetuates this ancestral recipe in his shop “Aux Vrais Macarons de Cormery“. Under his expert fingers, each macaron becomes a little marvel of indulgence, faithful to the heritage of the first craftsmen.
