Chickens and vines: a story of family and gastronomy. In 2013, Olivia and Vincent settled in Touraine, in the heart of the Bourgueil vineyards, at the Manoir de la Galottière (17th century). Committed to sustainable gastronomy, they opened their restaurant, "Vincent Cuisinier de Campagne", and were awarded a Michelin star. In 2014, inspired by their shared passion for poultry, Vincent, Olivia and their son Gabriel released 250 hens into the vineyards near the manor. Three years later, qualified in poultry production and processing, Gabriel set up his own farm close to the restaurant. This was the birth of "Des Poules et des Vignes". He quickly gained recognition for his free-range, old-breed poultry.
