There’s no doubt about it: chef Clément Dumont has a real gift for cooking. At his family-run restaurant in Loches, he serves up exquisitely refined cuisine that appeals to all your senses. Deeply attached to his local region, he brings out the very best in fresh, seasonal produce, which he sources as close to his restaurant as possible. In fact, he buys his ingredients from eight producers at the town’s weekly market.

Clément Dumont an experienced and talented chef

Born on 26 October 1995, Clément Dumont spent his childhood in Chinon. His career began with an apprenticeship in Saumur in 2010. The chef then went on to work seasonal stints in Courchevel and Saint-Barthélemy. It was in the Caribbean that he first joined the circle of establishments affiliated with Relais & Châteaux. This proved to be a turning point, as Clément went on to work for three years in five-star establishments belonging to this renowned association in Corsica and Val-d’Isère. In 2017, he headed to Australia and spent a year as head chef on a private yacht: “A formative experience. We obviously had to catch the fish, so we had to manage the supply chain, monitor water management and decide which fish to catch and which to release.” In 2018, he returned to the Centre-Val de Loire region, where he spent two years as sous-chef atthe Auberge Pom’Poire in Azay-le-Rideau.

And on 16 July 2020, he opened his own restaurant, Arbore & Sens, in Loches. The very next year, he won the People’s Choice Award at the 2021 Fork Awards, before securing his first Michelin star in early 2023! Meanwhile, Clément Dumont and his sister-in-law, Mayliss, tend a one-hectare vegetable garden in Bridoré (a village 16 km from Loches), supplying the restaurant just as many local producers within a 40-km radius do, such as La cabane à plantes. The environmental and social commitment of the Arbore et Sens team has been recognised with the award of three Écotable toques: on their first attempt, they have reached the highest level, a feat achieved by only two other restaurants in the Centre-Val de Loire region.

Top-notch service and dishes that are both visually striking and full of flavour

Lunch or dinner at Arbore & Sens is a truly enchanting experience. The welcome is extremely warm and friendly, and the service throughout is efficient and pleasant, always with ‘that little extra touch’. I particularly enjoyed the little ritual that pays homage to Clément Dumont’s childhood in Chinon: at the start of the meal, each guest chooses their knife from a selection of designs crafted by ‘Les Copeaux d’Abord’, artisan cutlers from Chinon. And so begins a ballet of aromas, harmonious plating, combinations of ingredients that are both subtle and daring, exquisite flavours, textures that delight the palate… And also impeccable pairings with the wines selected by Océane!

During a lunch last summer, I was genuinely amazed by a starter featuring courgette blossom. Such refinement! To tell the truth, the whole menu, from the amuse-bouches to the desserts, was surprising, indulgent and harmonious…I’m even running out of words to describe it. I also recall the Racan squab prepared two ways – mmmmm… As for the pastries, they’re always a special challenge in the kitchen. But here too, the Chef excels!

The menu evolves in subtle ways as the seasons change. It follows the rhythm of the harvest to ensure ingredients are always at the peak of their ripeness and flavour. This is where eco-conscious cuisine truly comes into its own, without compromising on beauty or taste. A tree stands proudly right in the centre of the dining room. The producers are in the spotlight, with their photos on the walls. That… No, I’ll stop there – it’s up to you to discover this magnificent establishment, which has quite naturally joined the small constellation of Michelin-starred restaurants in Touraine.

From the fork to the pen

A gourmet and food lover, Hubert Giblet founded the Val de Loire Terres de Gastronomie association, which organises the Automnales de la Gastronomie festival, as well as monthly gourmet walking tours. At the Azay-Chinon Tourist Office, he also oversees events organised under the Vignobles & Découvertes scheme.
